Rose Harissa and Hummus Kofte Pitas

Using Alexandra’s Rose Harissa Paste


200g pot of hummus

500g lamb mince

50g chopped raisins

1 1/2 Tbsp Alexandra's Rose Harissa

1 finely chopped onion

1 Tbsp olive oil

1/2 cucumber

Small bunch of fresh parsley, chopped

6 pitas (we love Danny's pita bread)

Drizzle of tahini

Handful toasted pinenuts

  1. In a bowl, combine half of the hummus, lamb mince, chopped raisins, rose harissa and the chopped onion. Season, then shape into 18 equal size kofte

  2. Heat the olive oil in a non-stick pan and fry the kofte, in batches if necessary, until golden all over and cooked through (8-10 minutes)

  3. Cut the cucumber into half-moons and mix with the fresh parsley

  4. Warm the pitas in the toaster, then split and spread with the rest of the hummus.

  5. Divide the cucumber salad equally among the pittas and add 3 kofte to each.

  6. Serve topped with a drizzle of tahini and toasted pinenuts.
