Bacon and Egg Sandwich with Dukkah

Using Alexandra’s Dukkah


2 free range eggs, hardboiled and peeled

1 Tbsp aioli or mayonnaise (plus more for spreading on bread if desired)

1 tsp dijon mustard

1 Tbsp Alexandra's Dukkah (more/less to taste)

2 slices good sandwich bread

1-2 slices bacon

Small handful of watercress or rocket

  1. Halve the eggs, remove the yolks and put them into a small bowl

  2. Add the aioli and mustard and mash together well with a fork

  3. Roughly chop the whites of the eggs and stir them into the mashed yolks with the Dukkah. Season with extra salt or Dukkah if desired

  4. Either chop the bacon and stir it into the egg salad, or cook in whole strips and place directly on the sandwich

  5. Spread some extra aioli or mayonnaise on toasted bread and heap the egg salad and greens on the other piece of bread

  6. Sandwich together and enjoy
